Chef Corey

My name is Corey, I’m a student in Business Management. Before coming to AU I worked in the food industry. I graduated from NAIT’s Culinary Art’s program in 2007 with a diploma in cooking. I have my journeyman certificate, Red Seal, and Blue Seal. I have worked in restaurants, hotels, golf courses, and coffee shops. These days I’m a stay at home parent to three kids, 10-year-old twins and a 6-year-old. My wife works as an RN and program manager at the Stollery Hospital.

Homemade is Better—Roast Pork Loin

Happy New Year, everyone! I hope you all spent some much-needed family time and had a restful holiday.  I know my family did until COVID entered our house.  I feel fortunate that we have avoided the other variants, and thus far (as of this writing), omicron doesn’t yet seem to be nearly as bad.  Our… Read more »

Homemade is Better—The Hawkeye

I have been in Scouting as a leader, which we call Scouters, for over six years.  When I first started with our group, my son was a first-year Beaver Scout.  As a Scouter in Beavers, you get assigned a nickname, and I got Hawkeye.  I love the name so much that I kept it when… Read more »

Homemade is Better—Denver Style Quiche

With Christmas approaching, hopefully we are going to be busier than last year.  And with our hustle and bustle comes the need for quicker meals.  This week, I made a quiche in the style of a Denver omelette.  This recipe uses breadcrumbs as a base instead of pie dough.  If you have a pie dough… Read more »

Homemade is Better—Stuffing

With the holidays around the corner, many of us will head to the store and buy ingredients for a most delicious holiday meal.  It might be turkey, or goose, or even prime rib, but then you’re going to travel down an aisle with shelves full of stuffing in a box, and you might think to… Read more »

Homemade is Better—Beef Jerky

Karl recently asked if it was possible to make beef jerky at home.  I wasn’t sure it was possible without a dehydrator.  Upon some quick googling, I discovered that it was indeed possible.  A YouTube series I watch (The Bearded Butchers) has an episode where they make deer jerky with a selection of their spices,… Read more »

Homemade is Better—Turkey Fried Rice

I’ve started watching the occasional Facebook video about cooking.  One show I got into is called Uncle Roger.  The host, Uncle Roger, talks about how so many people make chicken fried rice incorrectly.  Some of the videos are amusing, some of them make almost no sense.  But regardless, you pick up a few interesting tips… Read more »

Homemade Is Better—Orange Glazed Carrots

When I was in culinary school, we made this dish.  While I have created my own version, it blew my mind when I first had it.  I was impressed with how easy they were to make, and the flavours combined perfectly.  This recipe utilizes the natural sugar in orange juice to create the glaze and… Read more »

Homemade is Better—Tuna Melts

Recently, one of my daughters was asking for tuna melts.  I cannot recall why; I think they were off school that day, and we were trying to come up with a lunch or something.  My spouse and I have made a trade with meal planning; she plans the meals, and I execute them.  What a… Read more »

Homemade is Better—French Fries

A few weeks ago I wrote about making sweet potato fries, but, truth be told, I also made French fries that night.  My wife likes sweet potato fries, but I’m not the biggest fan, so I make French fries.  There is a bit of an art to making fries, but with that in mind, you… Read more »

Homemade is Better—Pumpkins

I got hit by the nostalgia bug when looking for pictures of past pumpkins I’ve carved.  I was trying to look for some of the neat carvings I’d done but ended up looking at videos and pictures of my kids when they were just little—as opposed to the eight and twelve year olds they are… Read more »
